15 SUPER SIMPLE snack ideas for at home or on the road

How does the saying go? I didn’t choose the snack life, the snack life chose me…..Yup, that’s the one and that is exactly what happened! Most days you’ll find me preparing a few of these super simple no-fuss snacks over traditional meals. I love these because they are quick and easy to assemble, most use 3 ingredients or less, have virtually a non-existent cleanup (a lot of one bowl recipes) and of course are so delicious!

A lot of these super simple snack ideas have common ingredients that can be mixed and matched with each other for more variety and are really easy to find at supermarkets around the globe. When I’m traveling, it’s nice to have something I can easily prepare or take with me on a road trip that feels like home.

1. Melon Prosciutto

This super simple snack is extremely easy to make. I’m not a huge fan of cantaloupe but when wrapped in prosciutto that sweet and salty mix is oh so delicious!

What you’ll need:

Ingredients: Sliced melon, (I use the orange one; cantaloupe), prosciutto slices. Amounts depend on how much you want to eat. I use a small slice of prosciutto to about 3 pieces of melon.

Tools: Hands, and a knife if you didn’t buy cut melon

Instructions: Cut a bite-size piece of melon and wrap it with some prosciutto. It’s literally that easy! Make sure the melon is ripe and juicy for the best flavors.

2. Ants on a log

Kinda sorta brings back those school kid memories. Not sure if my mom made the name up or if it’s nationally known. Regardless, Ants on a Log has been a popular go-to snack for as long as I can remember, even in my adult days.

What you’ll need:

Ingredients: 1/2 cup of raisins (more or less), 2 tablespoons peanut butter (more or less), a few celery stalks cleaned and cut into about 3 inch pieces.

Tools: Knife

Instructions: The ants=the raisins and the log=celery. Slice your fruit, smear some PB on it and place some raisins on top. It is seriously a super simple snack that everyone loves-even if they are creeped out by the name. Try “Ants on an Island” and use a banana instead of celery. Have an apple? slice it up and you have “Ants on a Boat”.

3. Burrata Salad

I don’t remember life before burrata! It so fattening, I ration it out reasonably and usually don’t have it on hand. When I get a craving-or when I’m living in isolation for weeks on end- burrata gives me life! Just in case you are not sure what burrata is, it’s a type of soft Italian cheese made from mozzarella that has a firm outer shell with a gooey, creamy, center. One thing to know, all burrata isn’t created equal. Two of my favorite supermarket brands is Mozzarita…Made with Love by Italian Touch and also Belgioioso because this one comes with two 4oz size balls, a perfect portion for one (twice).

What you’ll need:

Ingredients: One burrata ball, one ripe juicy peach, sliced, a few sprigs of fresh mint OR handful of heirloom tomatoes OR strawberries, OR make it a super simple snack and just use EVOO (extra virgin olive oil) salt + pepper.

Tools: Knife, plate

Instructions: I’m a big fan of burrata and fresh juicy peaches topped with mint. If it’s not peach season (peach season usually runs July-October) use whatever you have on hand. Go for a classic burrata salad of heirloom tomatoes and basil. Try it with sliced strawberries or other juicy sweet fruit that is in season. To make it a super simple snack, spread it on fresh bread.

4. Greek Hummus

My mom started making this all the time when I was in high school for family get-togethers and neighborhood gatherings. Of course, it’s a super simple, no-fuss snack that can be altered to your preferences. Add more toppings or leave some off. It is up to you!

What you’ll need:

Ingredients: 1/2 package of original flavor hummus, 1 cucumber, 1 medium tomato, 1/2 cup of chopped kalamata olives, 1/2 cup feta cheese. EVOO, salt + pepper. Additional vegetables or bread for dipping. The amounts can vary depending on what you like.

Tools: Knife, dinner plate, probably a spoon

Instructions: 1st spread out 1/2 of the hummus on a regular size dinner plate. Then top with 1/2 a chopped cucumber, then tomatoes, cheese, and olives. Next, add EVOO sparingly over the top and finish with salt and pepper to taste. Use the other 1/2 of the cucumber to dip along with carrot sticks, celery or crackers, and bread.

5. Chia Seed Pudding

This super simple snack has gotten so popular over the years. Healthy, simple and tasty, it does take a little more time to prepare (chia seeds need time to gel) but it’s worth the wait! This one is a great solution to an easy breakfast when made the night before. It has taken me a while to get the proportions just right and still the consistency changes depending on the kind of liquid I use. But good thing is, it doesn’t really matter. After the toppings are piled on it always tastes good!

What you’ll need:

Ingredients: 1 cup of some kind of liquid, I usually use almond or pea protein milk. 1/4 cup chia seeds, two drops of vanilla (optional), toppings of your choice: fruit, granola, shredded coconut, honey, nuts…use anything that floats your boat!

Tools: Refrigerator, measuring cup, bowl, spoon,

Instructions: Pour 1 cup of liquid into a standard size bowl. A bowl without a deep center works best. That way the seeds don’t sink and clump together at the bottom. Add 1/4 cup of Chia seeds to the liquid and mix to combine well. Add a few drops of vanilla and mix. Vanilla is optional, you can add honey too. Make sure all is mixed well or you will get a clump of seeds at the bottom and loose liquid at the top. Chill the mixture in the fridge for a few hours until the seeds gel up. Once it hits the consistency you like top it with your favorite fruits and a swirl of honey.

If you still notice a liquidy top and clumpy bottom after the seeds have gelled simply stir to break up the clumps, sprinkle with a few more seeds and return to the fridge. Sometimes it takes a few stirs before it becomes the perfect pudding. I usually make a few batches at night to have as a morning snack so I am not 100% sure how long it takes for the seeds to gel.

6. Frutti Tutti Cheerios

I have no clue how this one came about but once I tasted a bowl of cheerios with banana, raisins, and strawberries I never looked back. Every few months I go through a phase where I crave, what I call Frutti Tutti cheerios. I’ll end up eating 3 bowls or more a day until I run out of milk, cheerios or fruit. It’s usually the milk first so I’ll just go buy more milk until the cheerios run out. That’s when I tell myself it’s time to stop. This is the only cereal I eat with milk and this is the only way I’ll eat it. I guess technically it can be considered a meal but in smaller portions, it’s another one of my favorite super-simple snacks!

What you’ll need:

Ingredients: A bowl of cheerios (I prefer plain), 1/2 banana, 4 strawberries, a handful of raisins, whole milk. That’s the way I eat it but feel free to mix up the proportions or use a milk substitute.

Tools: Bowl, knife, spoon

Instructions: Mix all dry ingredients in a bowl and then pour milk over it right before you are ready to eat. If you wait too long the cheerios get soggy- I’m not a fan of soggy cereal. Strawberries give it a bit of a tang but the raisins make it sweet and all of the textures come together beautifully! Yes, I am describing a bowl of cherries as beautiful. haha

7. Chopped Strawberries + Cool Whip

One of the easiest and super simple snacks out there. It is a go-to summer favorite. Chopped strawberries and cool whip is exactly what it sounds like. That is 2 ingredients to mouthwatering heaven!

What you’ll need:

Ingredients: Strawberries, Cool whip

Tools: Fruit smasher or knife, maybe just your fist

Instructions: The easiest way to slice these sweet treats is with, what I’m calling “a chopper.” It is the round silver thing with a handle in the picture on the right above. If you don’t have one of these (this one has been in the family for over 60+ years) a knife and fork will do. Add a dollop of cool whip (or two) and that’s it! Another super simple snack ready in 10 mins or less. Lately, I started using coco-whip…a “healthier” version of cool whip even though they both are basically just sugar.

8. Cream Cheese + Red Pepper Jelly

Another super simple snack that is so addicting. I often bring this one with me to dinner parties and it is always a crowd-pleaser. I’m not a big fan of cream cheese but when it’s smothered in red pepper jelly you got a fan in me!

What you’ll need:

Ingredients: 1 block of cream cheese, 1 jar of red pepper jelly (or any kind you like), crackers for dipping

Tools: Plate, spoon

Instructions: It couldn’t get any simpler. Just pour the jar of jelly over the block of cream cheese and that’s it. All that is left is digging in! This snack goes best with buttery crackers like Ritz original.

9. Green Smoothie

A super simple, super green and super healthy go-to snack for when I need to detox from the block of cream cheese jelly I just ate.

What you’ll need:

Ingredients: Handful of spinach, 1/2 an avocado, 1 kiwi skinned, 1/4 banana, liquid, like coconut water, almond milk, or even water, a few cubes of ice (optional)

Tools: Blender, Spoon

Instructions: Add all the ingredients to the blender and blend. I use a magic bullet that works like a charm. I always add the spinach first to make sure it hits the blade and shreds up. Make sure to add the banana. If not, the taste is a bit too green. Feel free to add other berries or greens of your choice. Frozen fruit is best for a smooth, chilled consistency.

Pro Tip: When freezing old bananas to save for your smoothies make sure to take the peel off before you put it in the freezer. Otherwise, it’s a freezing pain to remove the peel once the banana is frozen solid.

10. Cheesy Spiced Tortillas

I don’t remember when I started eating these but I don’t remember a time I wasn’t eating them. Flour tortillas are my favorite. Soft corn tortillas just don’t do it for me. Maybe that’s the American in me (insert girl shrugging shoulder emoji)? Anyways, I’ve tried all the “healthier” kinds of tortillas with almond flour, cassava flour, whole wheat flour and who knows what else. One thing is for sure, cheesy spiced tortillas aren’t the same if it’s not made on a Maria and Ricardo’s organic white flour tortilla. They puff up perfectly and are not too thick or heavy.

What you’ll need:

Ingredients: Flour tortilla shell, shredded cheese (I prefer pepper jack) red pepper flakes (optional)

Tools: Microwave, plate

Instructions: This is another super simple snack that involves two steps. 1. assemble shredded cheese on a tortilla 2. place in the microwave for no more than 20 seconds. When the cheese is melted it’s done. It will be hot when it comes out so be careful. After it’s heated add some red pepper flakes for extra spice if you like. Just like I said, super simple and super delicious!

11. Charcuterie Platter

Who doesn’t love a good cheese + meats + antipasto spread? It is easily one of my favorite things to eat and super simple to make from anywhere in the world.

Traditionally charcuterie means a selection of cured meats assembled together. Here I’m using the term to describe a selection of much more than just meat.

What you’ll need:

Ingredients: I usually go with, artichokes, olives, thinly sliced meats like salami and prosciutto, a selection of hard and spreadable cheeses, and sometimes crackers and jams. You can add nuts, dried fruits, vegetables, and baguette slices too. Just grab whatever you like! There are not rules here.

Tools: Plate, Knife

Instructions: It’s a simple no-fuss set up for this one. I literally just pile everything on a plate, well neatly pile. I LOVE goat cheese and usually spread it over soppressata then roll it up. Use small bowls to contain jams or juices from fruits and veggies. It’s easy to make individual size portions but still super simple to make bigger portions to feed a crowd too.

12. Spicy Dunked Goat Cheese

Great as an appetizer or snacking throughout the day. So simple and so tasty. If you couldn’t tell I’m a fan of the spice. If you are not, opt for nonspicy ingredients and I’m sure it’ll be just as good.

What you’ll need:

Ingredients: 1 small log of goat cheese, 2 cups of your favorite red sauce (I always go for a spicy red sauce), toasted bread for dipping

Tools: Oven, oven safe baking dish OR use the microwave

Instructions: Heat oven to 325 degrees. Add the red sauce to the oven save dish and place the goat cheese in the center. You can pour more red sauce on top of the goat cheese. Add however much you want. I usually use about two cups total. Place in a heated oven for about 10-15 mins. Take it out when the cheese is soft enough to spread. Have some toasted baguettes or french bread on stand by and get ready to dip. I’m warning you this one is addicting!

You can use the microwave too. If you do this heat up the red sauce first. I’d say for about 1-1.5 mins then place the goat cheese in the sauce and heat up again in 30-sec increments until the cheese is soft and warm. Be careful not to burn it.

13. Goat Cheese Toast

My love affair with goat cheese will never end. You only need 3 ingredients to prepare this tasty no-fuss snack. I usually keep it super simple but feel free to add some extras like prosciutto, tomatoes + ground black pepper, toasted pinenuts or even peaches for a completely different vibe.

What you’ll need:

Ingredients: Fresh bread slices (I love Italian, sourdough or french bread), a few tablespoons of goat cheese, a drizzle of honey and some chopped walnuts.

Tools: Plate, knife, oven or mini toaster

Instructions: To make this super simple no-fuss snack, use a few slices of fresh bread, toasted if you like. Either way spread a few tablespoons of goat cheese on the bread. I like to warm the bread up so it has a toasted crust but a soft center. It also helps the goat cheese spread easier when the bread is warmed. Top with a drizzle of honey and some chopped walnuts and there you have it, another super simple snack that is super tasty!

14. PBR Rice Cake

I promise this one doesn’t taste like cardboard! It’s another peanut butter + raisins + honey combo. It makes for a great pre-workout snack or a quick on the go breakfast.

What you’ll need:

Ingredients: One rice cake (I usually get the slightly salted variety), 1 or 2 tablespoons of peanut butter, a drizzle of honey or a small handful of raisins (or both)

Tools: Knife or spoon to spread

Instructions: Spread peanut butter over the rice cake and top with raisins or honey. This is my favorite rice cake combination. If you are over peanut butter or don’t like raisins a simple google search will reveal pages of rice cake topping ideas. Take a look at some of Martha Stewart’s favorite toppings.

15. Crispy Treats

This sweet treat is super simple and still better than cookies, chips, and Cheetos (if you asked me). Sometimes I just want a bite of sweetness but most recipes make a whole pan. I tried my hand making single-serving treats and eventually found my perfect recipe. This one actually makes closer to two servings but yes, I eat it like it’s one.

What you’ll need:

Ingredients: 1 cup of cereal, 6 large marshmallows or about a 1/2 cup of mini marshmallows, dollop of butter or oil spray

Tools: Microwave, bowl

Instructions: Butter or oil your bowl (don’t skip this or mixing will be a pain in the tush) add 6 large marshmallows and a cup of cereal. Heat in the microwave for about 15-20 secs. The marshmallows will expand under heat so watch them and make sure they don’t expand over the bowl. Immediately mix the heated cereal and marshmallows together in the bowl. Mix in extra room temp mini marshmallows for more gooey yum! Let the mixture sit and firm up or enjoy right away.

I’ve seen this super simple snack made in a mug so I tried it. There is no doubt mixing in a bowl is so much easier!

Pro tip: Don’t use “healthy” marshmallows. This brand, Dandies all-natural marshmallows, doesn’t heat up well enough to mix in easily. I used Whole Foods 365 brand and they melted well.

If you don’t have rice crispy style cereal (I used brown rice crisps from WholeFoods) feel free to use any kind of grain cereal you have. I’m pretty sure melted marshmallows taste good on anything.
